Oat Flour Blueberry Waffles

Ingredients
  

  • 1 cup oat flour
  • 1/2 cup plant based milk (oat or almond)
  • 3 tbsp liquid coconut oil or olive oil
  • 1 tbsp maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup blueberries (fresh or frozen)

Instructions
 

  • In a medium sized bowl, whisk together egg, milk, oil, vanilla and maple syrup
  • Fold in oat flour, baking powder, and blueberries
  • Mix well
  • Heat your waffle maker and pour approx. 1/2 cup of the batter into waffle maker and close it
  • Cook for approx. 3-4 minutes until brown on both sides
  • Serve with fresh berries, bananas and/or maple syrup
