Gingerbread Protein Squares

These protein bars are full of warming spices for a healthy, yet indulgent treat.
Course Dessert, Snack
Servings 8 squares

Ingredients
  

  • 3/4 cup quick oats
  • 1/2 cup vanilla protein powder of your choice
  • 1/2 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 cup melted coconut oil
  • 1/4 cup almond butter
  • 2 tbsp blackstrap molasses
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Optional Icing (Not dairy-free)

  • 8 oz block cream cheese softened to room temperature
  • 1/4 cup plain greek yogurt
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • In a food processor, combine, oats, protein powder, ginger, clove and cinnamon
  • In a separate bowl, whisk together the melted coconut oil, almond butter, molasses, maple syrup and vanilla
  • Combine the wet and dry ingredients in the food processor and blend well
  • Spread the batter into a loaf pan lined with parchment paper. Refrigerate for 1 hour
  • Remove the squares from the pan and cut into 8 pieces

For Optional Icing

  • Place all ingredients in a large mixing bowl
  • Use a hand mixer or stand mixer and beat on medium speed for a few minutes, or until it’s smooth and fluffy, scraping down the edges as needed
  • Spread evenly onto your gingerbread squares and refrigerate before cutting into pieces
  • Enjoy!
