Gingerbread Protein Squares

These protein bars are full of warming spices for a healthy, yet indulgent treat.
- 3/4 cup quick oats
- 1/2 cup vanilla protein powder of your choice
- 1/2 tsp ground ginger
- 1/8 tsp ground cloves
- 1/4 tsp ground cinnamon
- 1/4 cup melted coconut oil
- 1/4 cup almond butter
- 2 tbsp blackstrap molasses
- 2 tbsp maple syrup
- 1/4 tsp vanilla extract
Optional Icing (Not dairy-free)
- 8 oz block cream cheese softened to room temperature
- 1/4 cup plain greek yogurt
- 1/4 cup maple syrup
- 1 tsp vanilla extract
In a food processor, combine, oats, protein powder, ginger, clove and cinnamon
In a separate bowl, whisk together the melted coconut oil, almond butter, molasses, maple syrup and vanilla
Combine the wet and dry ingredients in the food processor and blend well
Spread the batter into a loaf pan lined with parchment paper. Refrigerate for 1 hour
Remove the squares from the pan and cut into 8 pieces
For Optional Icing
Place all ingredients in a large mixing bowl
Use a hand mixer or stand mixer and beat on medium speed for a few minutes, or until it’s smooth and fluffy, scraping down the edges as needed
Spread evenly onto your gingerbread squares and refrigerate before cutting into pieces
