Sweet Potato and Broccoli Soup

Ingredients
  

  • 4 large sweet potatoes
  • 2 large carrots
  • 1 head of broccoli
  • 1 large onion (optional)
  • 2 cloves of garlic
  • 8 cups vegetable broth
  • sea salt to taste
  • black pepper to taste
  • 1 tbsp turmeric
  • olive oil

Instructions
 

  • Peel and chop sweet potatoes and set aside
  • Chop broccoli, carrots, onions and garlic. Heat some olive oil in a stock pot and gently cook the raw vegetables until the onions are softened
  • Add stock and herbs
  • Add the 8 cups of vegetable broth, sweet potatoes, and turmeric
  • Boil until everything is soft (about 45 min)
  • Blend to desired consistency with a hand blender
  • Season to taste with salt and pepper
