Squash Burgers

Enjoy with a butternut squash circle or sweet potato as the “bun.” Serve with guacamole and you will be in heaven. Nourishing, satisfying, high protein and gluten-free! Burgers can be barbecued or baked. If you choose to bake, 375° for approx 10 minutes per side.

- 1 lb lean ground beef/chicken
- 1/2 yellow onion, finely minced
- 1/2 tbsp cumin optional
- 1 clove garlic, minced
- 1 egg
- 3 tbsp almond flour
- 1 butternut squash- peeled and cut into 1/2″ thick circles
- 1 tbsp olive oil
Combine all the ingredients for the burgers in a bowl, mix well and form into 5 patties
Peel the squash and slice into 1/2″ thick rounds, then brush with olive oil
Bake the squash at 400° for 30 min
Barbecue the patties for 5-6 mins per side or until cooked to your liking
To serve, top a butternut squash circle with lettuce, a burger and guacamole/topping of your choice
