Socca Pizzas

Socca pizzas will be your new way to make pizza dough in a flash. Read on to learn more about this nutritional powerhouse.

Ingredients
  

  • 2.5 cups chickpea flour
  • 2 tbsp olive oil for frying and more as needed
  • salt to taste
  • toppings of your choice

Instructions
 

  • To make the batter, whisk together the chickpea flour, olive oil and 2 cups water and season with a pinch of salt
  • Add two tbsp olive oil into an 8-inch nonstick pan over medium-high heat
  • Pour ¼ cup of the batter and cook for 3-5 minutes, until the bottom is crispy, and the top is almost set
  • Carefully flip the socca and cook for 1 minute more
  • Transfer to a plate and top with your favorite toppings
  • Repeat with the remaining batter
  • Enjoy!
